My favorite theorem is the Theorem of Theaetetus, which says that <math>\sqrt2</math> is irrational.  What I like about it, however, isn't the theorem so much as the [http://en.wikipedia.org/wiki/Square_root_of_2#Proofs_of_irrationality proof] (see Proof by infinite descent) -- it's a very simple solution for a seemingly complex problem.
